- Rosmarinus officinalis
ROE. An anti-oxidant grade oleoresin that is oil soluble and used to treat oils and fats to delay/slow rancidity. Can protect some colours and flavours from degradation. Typical usage levels are 0.02 to 0.10%. Often used usage rate is .2 - 1 g. ROE per kg. of oil. An average rule of thumb volume measure equivalent to use is ½ ml or ½ dropper or about 14 drops to treat 1 L of oil. ROE can be added to room temperature liquid oils or melted solid oils. As with any anti-oxidant, the oil is best treated as soon as possible, especially with short shelf life oils. Once rancidity has begun no anti-oxidant will help. ROE is the oleoresin extract of Rosmarinus officinalis which has had the characteristic rosemary flavour and odour, as well as the chlorophyll, partially removed so it will not lend any colour or odour to the oil being treated at the low levels used. The fact that this product is natural, effective with treating oils and cost effective has made it a very popular product. Composition: rosmarinic acid, carnosic acid, rosmaridiphenol, carnosol, rosmanol, rosmaridiquinone, natural tocopherols.
